Schönes Rubinrot, ins granatrot gehend, ein Mundgefühl zum Niederknien, Säure mittel, Alkohol fließt weg, Tannin seidenweich, schmeckt nach Erdbeere und süßer Kirsche, erdig, pfeffrig, bleibt lange haften.

Maybe this wine is on its downslope now, but that's still coming from Everest-like heights. Roumier's Bonnes-Mares from this period were very powerful young and then turn exquisitely elegant at age +/- 20. This is light, pure, ethereal with dark fruits. Cellared since original release.

Infanticide, but we couldn't resist it. Still tightly wound and has many secrets left to show, but even at this age and with enough air you could tell that this is truly something special. Incredibly refined on the palate for such a big wine, and due to Christophe's blending of different plots it really is an amalgamation of the playful, red-fruited camp of Bonnes Mares alongside the darker, earthier and more brooding side of the appellation on the nose.

This will get a lot better with time. If you have the patience, I'd stick it in the back of the cellar and forget about it for a decade before revisiting. When it does, there will be clear upside - I'm sure at least 1 or 2 points - and I cannot wait to see how this blossoms.

This wine once again prompted the discussion around the liberal use of sulfur in Roumier's wines: is it too heavy handed? Perhaps... but then it does insulate them for the long-haul and hopefully will give us examples of truly epic mature Burgundy in the longer run.

Such a pleasure to share with M and cap off a lovely day in Burgundy.

Dark and brooding, the nose displays a deep core of dried fruits and spice. Dense and intense on the palate, with game, iron and dried red fruits, backed by a tannic backbone. Very complex and structured. Long persistence in the mouth. This still needs time.

Opened to a beautiful delicate nose, this wine was punching all evening with beautiful elegant tannins and so much delicious red crushed berries. Really a delight and I never doubt roumier to deliver on off vintages. The 06 roumier bonnes mares still rates as some of my favourite roumiers and this 06 cras did not disappoint either.

Day 2: A little more secondary notes of musky perfume and underbrush. Darker fruit this time. I loved how the wine transitioned from a sexy candycane beast to a more brooding farmyard animal. 92

The best '07's are really having their moment now and this is certainly one of them. Taut and minerally in the Roumier style with a wonderful smooth texture and great dark cherry fruit. Really improved in the glass for over and hour and the last sip was best so no rush here but no need to wait either. Beautiful, elegant Burgundy.

As good a Roumier Bonnes Mares as I've ever had. This is still youthful with a deep core of dark cherry fruit and it took a while to come around in the glass. Once it did though, the power and intensity was magnificent and the firm but lacy texture mind-boggling. Such amazing freshness and verve with a mineral-laden taut finish that is legendary. One of those Burgundies that reminds me of the heights these wines can reach despite the frustrating, costly and inconsistent process of finding them.

Day 1: Coravined two glasses. Took a while to open, then …bam! Loads of concentrated cherry and red fruit with a long finish. So pure and concentrated…the after taste still there hours after. Like chewing on cherry candy, reminds me of a Drouhin 1er Chambolle on steroids. Let’s see what tomorrow brings solid 93+ for today.

Opened at Le Cinq in Paris. Decanted and enjoyed over dinner.

You can tell that this will become an amazing wine when it finally loosens up. Unfortunately, it's still quite a long way away from this. This isn't a case of 'give it enough air' - we did this with a huge decanter - it just needs more time.

This wine also prompted an interesting discussion with Eric and the Sommelier team surrounding the usage of sulphur at the domaine. Perhaps the wines would benefit from a lighter application?

This experience also surprises me as to how open the 2014 is in comparison - I always have a great time with that.

Would put in the back of the cellar, and revisit in 5+ years. It can definitely use the time. I can't wait to see what this morphs into when it finally unfurls... however, patience will be rewarded best for now.

What a treat to open this as the final Bourgogne of the year.
Brought for NYE dinner - no formal notes.
Nose with a full store of spices, a complete flower garden and tons of minerals!
Just perfect - so deep and alluring, complex beyond words - completely seductive.
Palate is dense, filled with the most beautiful mix of perfect pinot Noir - cherries, sweeter strawberries, spices, earth, minerals.
Rich and complex, silky - but so much more to be had if if given another 5 years I would say - still acting like a very young wine.
Unreleased and held back at this time, but nevertheless completely and purely enjoyable and a gift from Bacchus.
Among the best bottles of Bonnes Mares I have ever had.
This might turn in to a 100 points wine with some further aging.
(97 - 99+)

Similarily tight to showing few years ago (for the vintage and typical for the producer). I double decanted this and drank from Sensory Conterno glasses. Very dark fruited, compact profile tight light a nut initially. It was a very impressive glass rather than a hedonistic enjoyable one. So I recorked and parked for day 2 which is when the structure had softened materially (also bearing in mind it had been double decanted) and was a much easier / better drink. So clearly keep those in the cellar for another 5-10 years if you can of open it early if drinking now.

Black and tangy blue fruit, a dollop of spice, fantastic acidity for a 1990 with a hint of citrus, deep vein of earth, and gentle residual tannins. This kept on expanding in the glass. Fantastic wine with a good decade of life in front of it.
